Does anyone know of any proxy software that I could install on a computer I have access to temporarily and then be able to bounce traffic through there from a remote location? Also the more undetectable the better, but I feel that goes without saying.

Are you hinting that you're wondering how you hack a computer, set up a proxy server there, and bounce your traffic through it to anonymous-ize it?
